Date molasses is a type of molasses made from date palm juice. Date palm juice is collected from Bengal Agrahayan month to Falgun month. The heat of the dates turns the juice into a thick and firm pataligur. According to the type, date molasses can be divided into Jhola gur, Dana gur, Patali, Chita gur etc.
Date juice and jaggery are very tasty. In winter, pies, various types of winter pitha, taal pitha, date jaggery jilapi etc. are made with date juice and jaggery. Date jaggery is known as Patali, Nalen jagger, Hazari jaggery depending on the taste and quality.
